Soy Sauce



Soy sauce is made from wheat, soy beans, salt and so on.
Tatsuno is famous for soy sauce, especially light soy sauce.
Soy sauce is originated from miso. A man from a temple in Nara left miso for years. Then the miso fermented and became soy sauce.
There are different types of soy sauce. Usukuchi (light soy sauce), Koikuchi (dark soy sauce) and Tamari (rich soy sauce).
There is a soy sauce company called Higashimaru in Tatsuno.
It’s very famous.
When we make soy sauce, we mix wheat, soy beans and aspergillus.
Then add salt, and leave the mixture for a half year. It becomes soy sauce.
It sounds easy, but it’s deep and tastes complex.
We hope that Tatsuno soy sauce becomes more famous.

醤油は小麦,大豆,塩などで作られています。
龍野はその醤油が日本でも有名で,特に薄口醤油が有名です。
醤油は,奈良の寺の人が何年も味噌を発酵させていると,味噌から醤油が出てきたことが始まりです。
醤油にも色々な種類があって,薄口,濃口,たまりなどがあります。
龍野にはヒガシマル醤油株式会社があり,とても有名です。
醤油は,小麦と大豆にこうじ菌を混ぜて,塩を入れ発酵させて,半年くらいたつと出来上がります。
一見すぐできそうな物だけれど奥が深く,味わいのあるものなので,もっと龍野の醤油が有名になってほしいです。

Great job! Your English is very good. I liked reading about soy sauce. My favorite way to use soy sauce is to eat it with sushi or sashimi.

Higashimaru is my FAVORITE soy sauce. Is the factory in Tatsuno? Is that why Tatsuno Station smells funny?

I had no idea how soy sauce was made. Thank you for the great description. If I had more time, I would try to make it! Maybe I should just go to the market :-)
